Peanut butter cookie dough bites are a convenient poppable snack that’s easy to make and will satisfy any dessert craving. These bite-sized delights are perfect for enjoying  throughout the day, and they also make a super quick light dessert. Offering loads of flavor without an excessive amount of sugar, they’re a smart snack for cookie lovers of all ages. Whether you’re a dedicated peanut butter enthusiast or simply want a wholesome treat, these cookie dough bites provide a delicious flavor experience.

NuTrail Granola is the perfect way to elevate this decadent edible cookie dough because it offers a sweet, nutty flavor and subtle crunch that complements the other ingredients. The nut-based granola takes the place of flour in these bites and ties all the ingredients together while adding a dose of healthy fats and protein from the nuts that will keep you satisfied. This recipe uses our Cinnamon Pecan Granola, but feel free to customize it with your favorite flavors, such as Cacao and Birthday Cake, to switch up the taste based on your preferences.

Why You’ll Love It

Better For You - These peanut butter cookie dough bites don’t have a lot of added sugar, making them a sweet treat that you can feel good about enjoying anytime. They are filled with protein and healthy fats that make them a satisfying snack you can enjoy without crossing the line into overindulgence or straying from your goals.

Prepping these cookie dough bites ahead of time can ensure that when hunger strikes you have something nutritious and enjoyable to grab. They are excellent for taking on the go and make a craveable treat for both adults and kids alike.

Do cookie dough bites contain egg?

Since cookie dough bites are often consumed raw, eggs are usually excluded from the ingredients list. Eggs typically add richness and structure to cookie dough but they can be easily swapped for nut butters to allow for a rich and delicious tasting dough without the egg.

Ingredients

NuTrail Granola - NuTrail granola is blended into the peanut butter base for added flavor and a satisfying crunch. Granola is the perfect addition because it offers high-impact flavor and makes a smart shortcut that reduces the overall number of ingredients you have to add.

Cream Cheese - Cream cheese is a significant part of these cookie dough bites because it offers added richness, a smoother consistency, and a hint of tangy flavor that complements the sweet and nutty elements of the cookie dough.

Peanut Butter -  Natural no sugar added peanut butter is ideal for this recipe but any you have on hand will work just fine. Just be sure your peanut butter is mixed well before adding it to the bowl as the oil in natural peanut butter tends to settle near the top when not refrigerated. Smooth peanut butter was used for this recipe but feel free to use chunky peanut butter for a great crunch.

Sugar Free Chocolate Chips - To keep this recipe low in added sugar, use low carb or sugar free chocolate chips to deliver that sweet chocolate flavor. Look for those who use natural sweeteners such as erythritol and stevia rather than maltitol which can cause gastrointestinal distress in those with sensitive stomachs.

How to Store Cookie Dough Bites

Leftover cookie dough bites should be stored in an airtight container and kept in the fridge for up to four days. Because they contain cream cheese, they should not be left out on the counter and must be kept chilled when packed into a lunch box.

Tips and Substitutions

- Swap the peanut butter for your favorite nut butter. Cashew butter and our birthday cake granola make a delightfully creamy treat. Macadamia nut butter, and almond butter are also excellent stand-ins.

- Customize the flavors by including a few tablespoons of your favorite add-ins. Chopped dried fruit, extra coconut flakes or white chocolate chips make excellent additions.

- When rolling the balls use a tablespoon for even measurement. This can be helpful for making uniform bites and ensuring you get the full yield.

- The cream cheese will soften within 15-20 minutes since it’s a small amount. To follow food safety guidelines, be sure not to leave it out more than two hours at room temperature.

What to eat with cookie dough bites

To curb excessive sweet cravings and maintain a balanced approach to snacking, it can be helpful to incorporate a variety of other nutritious options alongside your indulgent treats. This strategy not only helps control portion sizes but provides a more satisfying and wholesome snacking approach. Consider including protein-rich options on your snack plate such as cold turkey or chicken, sugar free beef jerky or biltong, and complement them with items like cheese cubes, hard-boiled eggs, cucumbers, tomatoes, and fresh berries for a well-rounded and filling snack that pairs perfectly with these sweet cookie dough bites.
