When working with natural peanut butter, just be sure to stir it before using since the oil tends to separate. Storing the jar in the fridge after mixing can help avoid it separating again.

Alternatively, you can use a lined muffin pan and separate the fudge evenly between the cups.

3 Ingredient Peanut Butter Fudge

Yield:  12, 1 per serving 

  

Ingredients 

1 cup no sugar added creamy peanut butter 

2 cups low carb chocolate chips  

1/4 cup NuTrail Cacao Granola  

 

1. Line a 9x5-inch loaf pan with parchment paper and set aside.  

  

2. Place the peanut butter and chocolate chips into a large microwave safe bowl. Microwave for 1 minute then stir. Microwave for an additional 1 minute then stir until completely melted and smooth. If needed, add 15-20 second additional time, stirring after each.  

  

3. Scrape the mixture into the prepared loaf pan. Sprinkle the top with granola and place into the refrigerator to chill for at least 4 hours, ideally overnight. When done, slice and serve.
