INGREDIENTS:

6 heaping cups frozen or fresh blueberries

¼ cup sweetener of choice

3 tablespoons coconut flour

½ lemon, juiced

¼ teaspoon salt

2 tablespoons unsalted butter, melted

INSTRUCTIONS:

  1. Preheat the oven to 350°F.
  2. In an ungreased baking dish, toss the blueberries with the sweetener, coconut flour, lemon juice, and salt.
  3. Bake, uncovered, for 30–40 minutes, or until the berries are broken down and thickened. Stir after 20 minutes. Frozen blueberries will take longer than fresh.
  4. Toss the granola with the melted butter in a bowl.
  5. Top the blueberries with granola and bake for 5–10 more minutes, until the crisp is settled.
  6. Cool for 5 minutes before serving.
