LOW-SUGAR BIRTHDAY CAKE CUPCAKES

CUPCAKES
¾ cup coconut flour
1½ tsp baking powder
½ tsp kosher salt
½ cup unsalted butter, softened
¾ cup granulated sweetener of choice
2 tsp vanilla extract
6 large eggs
2 tbsp buttermilk
½ cup NuTrail Birthday Cake Granola
FROSTING
½ cup unsalted butter, softened and cut into cubes
¼ cup powdered Swerve or other powdered sweetener
½ tsp vanilla extract
1 tbsp heavy cream, plus more as needed

INSTRUCTIONS
1. Preheat the oven to 350°F. Line a 12-cup cupcake tin with muffin liners
2. In a mixing bowl, combine the flour, baking powder and salt
3. In a separate mixing bowl, beat the butter and sweetener on medium speed until light and fluffy
4. Add the vanilla and eggs one at a time, beating well between each addition
5. Reduce the speed to low and add ⅓ of the dry ingredients, followed by 1 tbsp of the buttermilk, then ⅓ of the dry ingredients, the second tablespoon of buttermilk, and finish with the last ⅓ of the dry ingredients. Mix until just combined, then fold in the granola.
6. Divide the batter between the cupcake liners, filling each about ¾ full. Push the batter down into the bottom of the cupcake liner.
7. Bake for 20–25 minutes, until set in the center.
8. Remove the cupcakes from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
9. To make the frosting, whisk together the butter, powdered sweetener, vanilla, and cream until light and fluffy. If your frosting is too thick, add heavy cream, 1 tbsp at a time, until you reach the desired consistency. For a sweeter or thicker frosting, add more sweetener, 1 tbsp at a time.
10. Once the cupcakes are fully cooled, frost them and sprinkle with more granola.
