This Breakfast Fruit Tart with granola crust is the perfect medley of fresh fruit, crunchy granola and tangy yogurt. Whether you enjoy it for breakfast or a quick snack, this fruit tart is a satisfying treat you can truly feel good about eating. This wholesome option is filled with protein, vitamins and healthy fats to fuel your day without leaning on unnecessary ingredients.

A traditional storebought fruit tart might initially seem quite healthy, but a closer look at its composition can reveal everything from added sugars in the fruit filling, refined carbs in the tart crust, and a high caloric density throughout. This better-for-you version, however, relies on the natural sugars from the fruits for sweetness and our low carb Nut Granola for a sturdy base packed with a rich, nutty flavor and an irresistible crunch.

What is fruit tart filling made of?

Fruit tart fillings can vary depending on the recipe. Some may use a pastry cream filling, while others feature a cream-cheese based filling. This recipe uses simple and delicious Greek yogurt for its creamy filling. Not only does this add a more filling boost of protein, but it also delivers the perfect tang to complement your fruit tart’s toppings.

Plain and vanilla yogurts are great versatile choices, but feel free to use your favorite yogurt flavor for this recipe. Lemon, Berry, or even Cheesecake flavored yogurt also make delicious fillings.

If you're following a low carb diet, be sure to look for low carb friendly yogurts. Check the label for the brands that use low carb sweeteners such as stevia, monk fruit, and erythritol.

Ingredients

Nutrail Granola- Our nutritious granola makes the perfect base for this breakfast fruit tart. Packed with nuts, seeds, and tons of flavor, it provides a delightful crunch which complements the creamy yogurt filling.

Butter- Butter binds our granola together, creating a firm crust that holds the tart's shape. It also adds a savory component to the overall taste, balancing the sweetness of the fruit and the tartness of the yogurt. You can alternatively use melted coconut oil if you prefer.

Greek Yogurt- Plain Greek yogurt works best for this recipe because it has a thick consistency and won't leave your tart soggy. It also has a tangy and refreshing flavor that brightens up the entire dish. If you prefer a flavored yogurt, you can add a splash of vanilla extract or stir in a teaspoon of your preferred sweetener. Plain yogurt is ideal because there is no added sugar, but feel free to customize this ingredient to your liking.

Fruit- Bursting with vibrant pops of colors and natural sweetness, an assortment of berries and bite-sized fruit top this breakfast tart. Strawberries, blueberries, raspberries, kiwi and mandarin orange slices are all excellent options.

FAQ Breakfast Fruit Tart with Granola Crust

How to store a fruit tart?

Because of the yogurt, you will need to store leftovers in the refrigerator. Tarts will taste best if eaten within 1-2 days. If you'd like to enjoy them for meal prep, you can leave the crust empty, chop the fruit and store it in an airtight container. This will allow you to make the tarts as you're ready to eat them, helping to avoid sogginess and overly soft fruit.

Why are fruit tarts brushed with a glaze?

Some fruit tarts are brushed with a glaze to prevent the fruit topping from drying out. These glazes are often made of sugar, a thickening agent such as gelatin, and preservatives. If you’d like to make a quick glaze for these tarts, you can simply mix together lightly flavored fruit preserves and water, brushing it gently over the yogurt breakfast tart after assembly.
